Here's my recipe to make a detox soup :) Enjoy!
3 fresh tomatoes
Half onion, quartered
3 cloves of garlic, sliced
extra virgin olive oil
salt & pepper
300ml vegetable bouillon/ stock
fresh basil leaves

Fresh Tomato basil soup
Ingredients:
Cut a 'cross' on the top of the tomatoes.
To peel the tomatoes, boil some water in a big pan,
put the tomatoes in and turn off the heat.
Leave for 3-4 minutes.
The tomato skins will crack open.
Discard the hot water and add in some cold tap water
to cool down the tomatoes.
When cooled, remove the tomato skins accordingly.
Cut into half and set aside in a large bowl.
Heat up a soup pan, drizzle some olive oil and
add in the onion and garlic, cook for 2 mins
until the onion becomes almost transparent.
Add the tomatoes into the onion mixture.
Stir and let it simmer at medium high heat for 10 minutes.
Add a pinch of ginger (powder), some coriander seeds.
Add in the vegetable bouillon and let it simmer
for another 20 minutes.
Using a handheld blender, slightly blend the soup until
the ingredients creates a gradual texture.
Bring it back to boil, season with salt and pepper
and it is ready to serve.
To serve, add fresh parsley in the soup bowl and
sprinkle some fresh basil leaves for the aroma and garnish.
